DAY ONE

There is no yesterday and there is no tomorrow, today is the day I get it right. That’s my new formula. When I wake up on a brand new day I will repeat that mantra.

Happy Friday to all. Today is my new official day one. I plan to post daily even if it’s just a quick update. There is a lot going on in my world, but to me that is the perfect time to begin anew before my weight gain gets out of control. I weighed in officially today, I am 191.8 lbs.   I was 159 lbs over a year ago. I own my slip up and I am ready to put the hard work in, this time I am vegan.

I am vegan for the animals and environment, and I am experimenting what works for my health and weight loss as I begin this journey to lose weight again. I am going to try to eat clean and whole foods/plant-based. I am lowering my oil, salt and  refined sugars significantly. I am also keeping a daily food journal with the Loseitapp. For the last six months I admit I did not try as I should have, and I ate a lot of vegan junk food. I am grateful those foods exist but from now on those will be occasional treats for me, just like meat based treats were occasional my first time around on this blog. I promise I will not get obsessive in my food choices, but to be frank I feel like complete crap and I am ready to get back to being me. For now I am shooting for 1,370 calories daily. That should translate to a over a pound a week weight loss.

Breakfast today was a half cup cooked oats with a small diced apple, one tablespoon chia seeds and soy yogurt. I had one cup of coffee with non dairy creamer, and I am on the look out for a non dairy creamer that is cleaner without added oils. I am open to suggestions. One cup of coffee for me daily is non negotiable. I love my morning java.

Wish me luck as I experiment and embark on this brand new journey. Off to workout before my night shift. Have a fabulous weekend full of gratitude for every moment.

MY DAILIES

Fall nine times, get up ten.

These are my dailies. I just committed to really try to post daily everything in regards to this brand new journey. I am starting from scratch and my plan is to be a much better version of myself at the time of my winter solstice birthday December 21st. I am not looking behind at past successes and failures, I am now striving to be completely forward thinking. I may start a Youtube channel with one video a week but for now below are my dailies. Of course there will be more but this is the basics that I plan to really stick to. One Hour workout, it may be one hour of cardio and some days my benderfitness workouts combined with TRX, yoga, weights and cardio. No rest days, on rest days I will take a long walk but I need to keep it going or I will quit. I am all or nothing. I also plan to workout on some days around midnight since I work nights.

My food lifestyle is vegetarian but I eat mostly vegan and my days are mostly raw foods. This may sound confusing. I am vegan 95% but if I am out I allow flexibility, In example I am going to a dinner party tomorrow and the host asked how I eat, my husband James responded vegetarian so tomorrow I will do my best to be vegan. On work days I eat mostly raw foods, I am not 100% raw but I am learning so much. I don’t think I can be 100% raw but I like incorporating more fresh and raw living foods into my lifestyle. I will do a post later about which online  raw foods influencer I am following for inspiration. I am also counting my calories on the LoseitApp. I am trying to stay under 1,300 calories daily. The calories help me incorporate foods on occasion without blowing my plan. My online food journal is a must.

The good, the bad, and the ugly. I will post every single day. I need to learn to post from my Iphone. I am not going to get into SEO’s and things I am not familiar with. I have time constraints and my plan is to document this journey and get inspired by those doing the same. To learn from others, experts and people going through similar challenges in life. I will blog and countdown to my winter solstice birthday every single day. I hope to hire someone to help me fix up my page to make it more user-friendly and to learn more about WordPress. In the meantime, I am present and in the moment. Today is day two, and my workout today will be late after work. No excuses. 

My husband James and I are working together to become better versions of ourselves. We are using affirmations and positive self dialogue. No more calling myself fat, or diminishing a complement when someone is kind enough to give one. There is a business center here in our complex and we plan to hold manifestation meetings at least once a week. I also plan to treat myself to swimming and the hot tub, feels so good after working out. Less television time and more doing. 

That is the basic plan. There are a lot of goals I am working on, some financial, personal, creative, and some to do with family and friends. This is the basic weight loss and fitness plan I am doing. Let me know how you get back to working on weight loss and fitness goals after a long hiatus.

It has been way too long, and I am so happy I am back. I promise despite my struggles and the nuances of life I will be accountable here and keep up my dailies. I also want to get back to doing charities so Monday is my day off, I will be making phone calls.

WEIGHT LOSS JOURNEY 2.0

Happy Tuesday to all. Today officially begins the second round of my weight loss journey and this blog. It is a brand new beginning. I am not looking back, I am looking forward. There are a lot of thoughts that occupy my mind but I refuse to let the negative ones take up my precious mental space. One thought that comes to mind is that blogging has changed so much since I began in 2013. Everyone seems to have professional blogs and sometimes I feel like my little weight loss blog doesn’t seem to fit anymore. I do not have professional equipment, heck I need a new computer and a new phone. When I began in 2013 I didn’t even have a cell phone. That didn’t work out for me so I decided to venture into the modern world and I have not looked back. I have noticed a lot of blogs and their Instagram pages seem to also have professional photos. So, what am I to do, wait until I have all of these material items or like my Mom would say, “suck it up kid and just do it.”

No negative thoughts, this is my blog and my journey and I do not like to put things off. Life is too short. So Here I am, day one with a lot of blessings that I have to be able to begin a brand new healthy lifestyle. Instead of looking at the negative reasons I do not fit, I am listing the things I am grateful for. These things help me as I begin my healthy lifestyle again. Weight loss journey 2.0

  1. I learned so much the first time around, my best friend is fitness blogger and I can do her workouts at home anytime. Check her out at www.benderfitness.com
  2. I know my body, and what it needs. I simply stopped doing it, but I know the ins and outs of nutrition and how to live a healthy lifestyle. I live a plant-based lifestyle and I really have learned in the past to treat my body like a temple and not a trash can. I am just relearning my former healthy habits.
  3. I may not have all the fancy equipment, but I do have a phone, a computer; and I live in an apartment community that has a two level gym, a pool and a jacuzzi, a computer room among other amenities. I can utilize these gifts for my blogging experience. I also live in an area that is amazing to run in. The weather is mostly warm and I should have no excuses going forward. Gratitude before grumpy excuses.
  4. Plant based and transitioning to Veganism in Houston sounds crazy, and in a way it is. HEB is the best grocery store with so many healthy options. I cannot say how happily surprised I am with their selection for so many types of healthy lifestyles. Vegan in Texas?  Heck yeah, with the help of HEB. 
  5. My husband James. Having someone on board is huge. He is really into working out and cardio, and is open-minded to transitioning to a plant-based diet. He walks the walk, and we work out together. He even paid for me to get my group exercise instructor Certification with The American Council of Exercise. I passed my CPR and my exam is on August 27th. I am so grateful to be married to my best friend and that we mirror each other’s stride.

So, excuses be damned. I am in it to win it, and my prize is a healthier me. Day one done and done. Here we go!!

WEIGH IN DAY

Happy Memorial Day Weekend to all. Thank you to the men and women who have kept us safe through the years. We remember those who have sacrificed their lives for our freedom. 

I work tonight, but I am off tomorrow. I am enjoying the weekend when I am not working with my husband James, and we are having what he calls summer fun food. I eat plant based so for me that means vegan hot dogs. It is not exactly a healthy weekend though, I do indulge in buns with my vegan hot dogs. I love our time together.

After having bronchitis I am ready to resume my workout schedule, so I decided Tuesday is the perfect day to jump back into my healthy lifestyle and routine. I did weigh in today and I am starting this weight loss journey at 187 lbs. Soon I will be visiting the Dr and seeing about Thyroid medication. I have done the hard work before, and I always felt wonderful so I am ready to begin again. I will share everything I am doing to lose weight again, and resume the wellness lifestyle that is the best fit for me. I am the creator of my life. 

For today, there is work and a holiday tomorrow. See you Tuesday when I begin to live my best life. Past weight loss or gains don’t matter to me. I am only traveling forward.

WEIGHT LOSS JOURNEY

Good Day to all. I am on my day three of beginning my weight loss journey again, looking through a new lens and enjoying the beginning stages. I had quite the hiatus from my fitness and weight loss goals, so picking a charity to focus on has made all the difference in the world. I am doing a personal food drive for my first ten pounds. 

As I said in my previous post, each day I work out and eat healthy and stick to counting my points and staying accountable to my goals I will buy two cans, one for diet and one for workout. Monday and Tuesday I earned four cans for my food drive and I am beginning to feel much better. Putting my focus on earning cans for a food drive has made all the difference for me and it’s the first time in months I am sticking to my plan. I am promising to do something that helps me and will help others.

My plan is simple. I am doing the 80/20 rule again. I eat low processed and clean most of the time, and I trust my willpower to allow slight deviations without having a binge. I don’t want to be too all or nothing because that often backfires. I am also doing weight watchers online, counting my points and eating a lot of vegetables and plenty of fruit. I am not giving up on grains but keeping them to a minimum. To begin my first week I am jumping back to an hour of cardio a day. My plan to exercise every day for an hour or so, and I will be adding my workouts and yoga to my training schedule. 

I have a photo shoot planned in Pittsburgh PA on the summer solstice in 2018 to document my weight loss journey. It will be the five-year anniversary of my blog and I plan to be an after. Right now I am a work in progress. I have so many goals and plans for this blog going forward, but week one is just about finding my way back. I am finding myself again and it is wonderful.

TYING THE STRINGS BACK TOGETHER

If you follow me you know since April my the strings in life started to unravel. I was able to have much weight loss success despite personal struggles because I was in control of the struggles in my life. I couldn’t control what was to come. My Mother passed away and my husband James took a position in Houston Texas and soon we left West Hollywood for Houston. It was our third move since 2014 and a big one at that. The summer for me was healing and not much else. I somewhat lost what I was working on as I tried to heal myself from the inside out. I also became vegan which was a transition for me. I since decided for now I will be vegetarian.

Today is the Autumn Equinox and day one of the second chapter of my weight loss blog, my official restart and my weigh in. I am not looking back now, I am only looking forward. For the relaunch of this blog my focus will be on health, wellness, fitness and goals. I still plan to sponsor a charity with each ten pounds I lose but I also will make a list of goals for each month beginning in October. There is going to be a give-a-way on my Facebook page, and I also promise to commit to posting if not every day every other day.

I am all in again, like I was in 2013 when I began this blog. I will not let WordPress struggles or life get in my way. I will be here and present even when things are not going my way. I will be raw, honest and forthright. I am putting all of myself out there beginning with my first weigh in today. I went from 159 to 179 in 5 months but that is ok, I got this and there is no shame in my game. 

I am human, I am me and today I am moving forward. Fall nine times, get up ten.

 

EASY WINTER SOUP

It has been so cold here in LA, San Francisco cold. When it is chilly like this you want comfort food to warm your body and soul. Soup is cold weather food but it is also a wonderful opportunity to cook with a lot of vegetables. Last night my hubby requested I make healthy soup and I obliged because we are trying to get back to eating clean and healthy in the new year.  I was planning on making my vegetarian Split Pea Soup ( Here is the recipe) http://mychangeforaten.com/how-to-make-vegetarian-split-pea-soup/

Trader Joe’s did not have any split peas so I decided to make Chicken Sausage soup with lots of fresh vegetables. I am on a quest to eat less meat, and I am limiting my use of animal products with hopes to transition to vegetarianism and later veganism. In the meantime, I do use some animal products and this soup is one of those times. Below is the recipe given to me by my friend Cameron. I am back on track for the new year, and soup is my go to meal. Cameron, like me rarely eats pasta so we both substituted shredded cabbage for the pasta. I used two cartons of low sodium vegetable broth for the chicken broth. I used spicy chicken sausage and it really flavors the soup so I just seasoned it with very little salt, some dried basil and black pepper. We skipped the Parmesan Cheese. 

This soup is as easy as it is written out. We had a simple salad of romaine, tomatoes, red onion and oil and vinegar. I am really trying to limit our sodium intake. 

This meal was healthy and so satisfying. We completed the meal with sprouted bread topped with Miyokos non dairy creamery spread, made out of Coconut oil and organic Cashews. It was delicious, but of course we used portion control. I read about it in the Magazine VegNews and when I went to Trader Joe’s I was delightfully surprised to see it on the shelf, and it really was a hit with my husband James.

Trader Joe’s Lentil Dip

If you have followed me or you know me, you know I am often inspired when I walk into a Trader Joe’s. I love it and love their products. I sometimes think I am their biggest fan.

I had the opportunity to sample this Trader Joe’s recipe at one of my local Trader Joe’s some time ago, and I decided to recreate it at home and serve with all natural plantain chips. The original recipe calls for plain feta, but as the suggestion of a Trader Joe’s crew mate I used Mediterranean feta instead. This could be served over fish or chicken, or as a side dish as well as a dip. It was so delicious, both James and I loved this dip and we will be having it again. We killed it!!

INGREDIENTS

1 package Trader Joe’s Steamed & Fully Cooked Lentils, rinsed to remove extra sodium

1 package Trader Joe’s Mediterranean feta cheese

1 container (7.25 oz) Trader Joe’s bruschetta Sauce

 

DIRECTIONS

In a medium bowl, combine steamed lentils,  Mediterranean feta and bruschetta sauce, then stir. Serve cold with homemade or store-bought plantain chips. Trader Joe’s has two types of plantain chips and both only have two ingredients, a clean eating win. I am absolutely hooked on this healthy dip as I know you will be as well.  

You can treat your body as a temple and still enjoy the pleasures of life. Healthy does not equal boring.  As with everything I practice portion control.

MASTERING THE ART OF FRUGAL COOKING

It was the movie Julie and Julia that inspired me to write a blog. I was living in NYC and already on my way to really delving into my poetry and writing. I saw the movie and fell in love. I felt such a connection to the film.  I was living in NYC but I have always dreamed of Paris. NYC was my first dream and I was living in the midst of it. In the film Julia Child seems to just eat up life, and I totally related to her attitude and outlook of the beauty of being alive. The food in the film, and the locations were definitely the co-stars. I admit I have seen it over a 100 times. Food does really bring people together.

Update to now, I am down almost 60 pounds, I have been through a few moves and I am back in LA stronger than ever. I am on a quest to lose more weight and I am also on a fitness journey and as soon as we settle in I will be back at doing charities.  I am not cheating on my diet until my 50th Birthday December 21st. I started on the summer solstice and I am continuing until the winter solstice. I got this and I am going strong. Committing to no cheat days is really a game changer for me. We have been through a lot and this personal commitment has made all the difference for me. I have taken to cooking at home because of finances. Finances will not stop my goals. I am mastering the art of frugal healthy cooking, for my fitness goals. Last night I made cauliflower and zucchini nachos, inspired by delish.com. I think you will absolutely love them, The addition of the rotel tomatoes is a game changer I believe. These gluten-free nachos are my new go to recipe when I feel I need a semi splurge and they are so easy and economical. I think Julia Child would approve.

Inspired by a recipe on delish.com

I head of Cauliflower

i cup of sliced zucchini

3 tablespoons of extra virgin olive oil

Half packet of gluten free mild taco seasoning

sprinkle of garlic powder

1 bag cheddar/jack cheese shredded

1 can mild Rotel tomatoes (makes the recipe)

half jar of mild salsa

1 sliced avocado

Greek yogurt or sour cream

Pre-heat oven to 425

Spray a large cookie sheet with cooking spray. Spread out sliced cauliflower and zucchini, coat with extra virgin Olive Oil, and half packet of mild taco seasoning and garlic powder and mix and coat generously.

Bake for 20 minutes

Add bag of cheese and bake another 5 minutes.

Add one can of Rotell tomatoes, generous amount of salsa.  I put on greek yogurt and avocado for each personal serving.

This was the most amazing dish and so yummy. You could add meat or meat substitute if you wish.

HEALTHY VEGETABLE SOUP

I just entered week two of my newest journey since I started this blog two years ago. I joined Weight Watchers Online last Tuesday to lose the eleven pounds I gained when I was away the fourth of July weekend, and to break my plateau. How did I gain that much weight in three days? Welcome to my struggle. If you do not know I lose weight slowly, and that may be do to an adrenal tumor and too much Cortisol. I work very hard, but for me slipping up causes havoc on my body. That is why I rarely do it. I lost over 50 lbs on my own and now I feel I need the help of Weight Watchers to help me keep track of my food and help to get the scale moving again. That with my running, yoga, and Melissa Bender Fitness workouts and guidance I should be able to take this to another level. I slip up a little, and the scale moves forward a lot. I have no room for error it seems. I sometimes feel like I have the worst metabolism ever, but I challenge it and come out fighting. I never give up and this will not happen again. Weight Watchers will help me to not make that mistake again, it is not extreme and easy to stay on track. I am afraid I was getting to obsessive with food and I ended up on a holiday weekend splurge as the result of eating too little.vegsoup

Today I am happy to report I lost five of those eleven pounds with six more pounds to get to what I call my fighting weight. I am now 171 lbs.  After I get back to 165, I plan on picking a charity and losing the next ten pounds and getting to 155. I will never have a three day cheat day again, it really did me in. Moving forward,  I am excited and motivated and enjoying my Weight Watchers Online experience. The WW app makes it a game changer for me with my new smart phone. I got  this. My final goal is around 135 lbs.

This was my dinner last night, and it was Fabulous.

This recipe is a combination of all the soups I make, and Weight Watchers zero points vegetable soup. I have formatted it how I like all of my soups. I took my recipes and their Weight Watchers Vegetable soup and came up with this. You can be really creative and use any fresh or frozen vegetables you have on hand. You can even add legumes if you want it to be a bit heartier. This is your soup, make it as you please and it will please everyone who eats it. It really was a fantastic Meatless Monday dinner. My version has 1 point because I choose to use oil in my soups, if you beans 1 cup would be 3 points.

1 oz of Parmesan cheese would add 3 points, as would one oz or Soy Faux Parmesan cheese.

HEALTHY VEGETABLE SOUP

  •   4 cloves garlic, minced   
  •   2 medium uncooked carrots, diced   
  •   2 cups green beans, fresh 
  •   2 cup(s) (shredded) uncooked savoy cabbage, or other variety, shredded   
  •   1 cup diced zucchini
  •   1 medium uncooked onions, diced  
  •   half cup uncooked celery, diced   
  •   2 tsp fresh basil, chopped   
  •   2 cartons reduced sodium vegetable broth   
  •   1 large can diced tomatoes
  •    1 can tomato paste
  •   2 Tbsp fresh parsley, or chives, fresh, chopped
  •   1/2 tsp table salt, or to taste    1/4 tsp black pepper, or to taste  
  •   1 can legumes of your choice, low sodium. (optional)

 

  • Instructions

Saute’ onions, carrots and celery in 2 tablespoons extra virgin olive oil until clear, about 5 minutes. Add garlic and saute’ 2 more minutes. Add tomato paste and stir. Add 2 cartons vegetable broth and 1 can of tomatoes, and all vegetables and seasonings, and simmer for 30 minutes.

This is super easy, and if you like you can add a can of beans, low sodium of course. I used great northern beans and added it after 20 minutes. A little sprinkle of Parmesan cheese really makes this feel like a decadent Italian soup.
