Vegan Vegetable Beef Soup

I decided to come back to this blog, to figure out things by returning to what worked for me in the past. Losing weight, achieving fitness and wellness milestones while helping charities. I haven’t exactly figured out my 2023 spin on it yet, but I’m excited to be here. My other blog JuiceJavaJoy will launch once I wrap this one up in a big red shiny bow.  I plan on getting my spark back by finding my fitness, losing the weight I gained and helping others along the way, as I help myself.

Today I begin by tracking on the loseitapp ( sometimes I use the WW app)  My daily calories will be up to 1,600 a day. I’m starting with smoothies again even though I need a better blender.

Cooking is important, as is planning meals. I have to not only plan meals for me but my husband.  That can be tricky, as it is if you have children too.

Here’s a delicious soup you can make for #Meatlessmonday  I’ve been under the weather so even though it’s 107 here in Texas, it’s a soothing dinner with leftovers for lunch the next day.

Serve with a delicious crusty bread and oyster crackers. Remember your portion control. Let’s do this again. Welcome back to my mychangeforaten journey part two.

Vegan Vegetable Beef Soup

Prep time 30 minutes

Cook time 45 minutes

Ingredients

7 stalks celery diced

Half bag shredded carrots

1 medium diced onion

6 diced cloves of garlic

3 handfuls spinach

2  1/2 tablespoons Better than Bouillon no beef base

1 bag frozen vegetables

8 cups water

2 cup noodles

1 bag frozen beyond beef steak or optional white beans or both

Two tablespoons olive oil

In a medium to large pot add 1 tablespoon of olive oil and celery, carrots and onions. Cook about 5 minutes or so until the onions are translucent.

Add diced garlic and continue to sauté another 3 minutes or so.

Add 8 cups of water and stir, adding the Better than Bouillon no beef base until it dissolves.

Add bag of frozen vegetables, stirring.

Add spinach and continue to cook for about 20 minutes.

Add noodles to soup and time according to the directions on the noodle package. If adding white beans drain and add after the noodles and cook an additional ten minutes.

As the soup cooks add 1 tablespoon of olive oil to a nonstick pan and cook frozen beyond steak according to package.

When the beyond steak is cooked add directly to the soup and stir.
Enjoy 😉

SALSA RECIPE

We finally got a blender. It’s a decent one, not the one I dream of. I dream of a vita-mix or a Ninja that can help me make all of the vegan goodies.

This blender is good though, and I’m happy with it. I’m making lots of green smoothies and we finally did a salsa experiment. It was delicious, fresh but my hubby thought not salty enough. Eating less salt takes time as your palate adjusts.

Happy Thursday. Here’s the easy peasy recipe. Enjoy

You will need:

Six Roma tomatoes.

a small can no salt diced tomatoes.

A quarter of a large red onion.

Two green onions.

1 clove garlic.

Half jalapeño.

Handful of cilantro.

Juice of one lime.

Dash of salt and pepper to taste.

This is so easy. Dice the Roma tomatoes. Add to blender with the canned no salt diced tomatoes with juice. Add all ingredients and blend until you achieve a salsa consistency. Do not over blend if you like chunky salsa. Add to bowl and flavor with a dash of salt and pepper. Garnish with a few chopped green onions.

This recipe can be altered to any taste you have. Get creative. I know some people who roast the veggies before making the salsa. I may try that next.

We loved it. I put mine on my tofu wrap and my hubby ate his with tortilla chips. It really was so fresh.

Let me know if you attempt  homemade salsa.

Have a wonderful day. Love and light, Rose

VEGAN SPLIT PEA

I’m vegan now, but I was vegetarian for years. My Mother at first resisted, then she went to work creating recipes for me. It was the mid 90’s and vegetarian options weren’t a plenty like today. This is one of the many simple yet fantastic recipes she came up with. It happens to be vegan. I never liked split pea soup until she made it for me back in the day.  There are many more recipes I want to try, one being her vegetable stew with dumplings. This recipe is a lot less complicated, and oh so hearty and healthy. We like to eat it with a big salad and crusty whole grain bread. You can sauté the veggies in water if you choose to omit the olive oil. Manga like my Mama!!

Ingredients for Split Pea Soup
1 bag dried green split peas
3 tablespoons extra virgin olive oil
I used to containers of mirepoix mix, or a generous 2 cups of celery, carrots, and onion
7 cloves of garlic chopped
2 cartons of low sodium or regular vegetable broth
salt, pepper, basil
This is so easy
In a large pot warm 3 tablespoons of extra virgin olive oil
add mixture of celery, carrots, and onions
cook until translucent
add chopped garlic
season with a generous amount of pepper and basil, and a couple shakes of salt
add bag of green split peas
half bag of chopped carrots
2 cartons of vegetable broth
Bring to a boil on high uncovered, and then lower temperature to simmer, and cook for one hour covered, stirring frequently. Enjoy and try to save extra for the next day. Sometimes I cook it just a bit longer, but I never purée it.
Such a simple soup yet a soup that truly warms your soul.
It’s a meal we eat again and again.
Enjoy!!
