VEGGIE CHILI RECIPE

It’s been raining non stop here. We are definitely on our clean eating lifestyle but that doesn’t mean we can’t have our favorite fall favorites. My hubby James requested Veggie Chili. Here’s my rainy day vegan veggie chili recipe. I had one bowl. It was absolutely delicious. We pair it with a big green salad. It’s high fiber, high protein and definitely comfort food. I hope you enjoy it as much as we do. Love and Light. Rose 

You will need:

2 tablespoons olive oil.

1 large onion, diced.

1 large green pepper, diced.

1 large red pepper, diced.

5 cloves garlic, diced.

2 large cans diced tomatoes, no salt.

1 large can tomato sauce (hunts)

3 large cans red kidney beans, low sodium.

1 can corn, no salt.

1 package faux grounds. I like gardein or lightlife.

2 packets chili spices

salt and pepper

Heat olive oil over medium heat, sauté onions, peppers until caramelized. Add garlic and sauté a few minutes more. Add vegan grounds and mix with vegetables. Add 2 cans diced tomatoes, 1 can hunts tomato sauce, 3 cans kidney beans, corn, and stir. Fold in two packets of chili spices, and add a dash of salt and pepper. Mix and cook on medium/low for 45 minutes. Serve with avocado and vegan sour cream. It’s so yummy!🎃

 

WEIGH IN WEIGHT GAIN

I was reading Mantra Wellness Magazine, (photo from the pages of the magazine). I opened the magazine and this was the first page. It totally spoke to me. I messed up, again. I gained 3 of the 13 lbs I lost. Here I am, facing the music and starting over.

Weight loss is a series of ups and downs. You begin all gun go until a holiday or other food related event comes along. All of a sudden you stop tracking and you promise yourself just one bad day. Then there’s leftovers, so one cheat day becomes two. Soon you have lost your momentum. I’ve been there when I was successful in my weight loss the first time around, and I’m there now at the beginning of my second weight loss journey. The key is to catch it, to own your slip up and get back on that weight loss wagon. Get on the scale, face it and get moving. I gained three pounds. My weight is currently 174 lbs. I’m still down ten, and I’m catching this now before I gain the whole ten back. I’m making like a GPS,  I’m yelling recalculating. Here’s how I’m going to get back at it and stop the gain cycle and continue on my wellness/weight loss/fitness journey part two.

The first thing is to access the damage, weigh yourself. You need to know where you are.It’s easy to be in denial. Better to cry over a few pounds now. I weighed myself and tracked my weight. 

My next step is to track all my food, and as a ww member I’m going to try to be in blue dots. That means stay within my healthy range of points, period. I noticed my weight went up when I didn’t track.  When I did track I went over my points. My day begins with 24 oz of water with lemon, and a banana and an apple or whatever fruit I have. I let my body digest it before my daily one cup of coffee. Then my breakfast. Lately I’m eating a garden of life plant based protein bar with my coffee. Hey, I’m on the run and it’s only 5 pts. I’m going to make oat and peanut butter protein balls too. If you are vegan I would love to know some fast and healthy breakfasts that are your favorites. 

Being accountable here helps, so I plan to try to blog daily and try to get better sleep. I have two Siamese cats, and the minute our heads touch the pillow they decide it’s time to party. We have to get better sleep, that’s number one. 

Move daily. Non negotiable. That’s my only fitness rule right now. I’ve been spotty with my fitness so I’m making this one goal to start. Move my body vigorously for 45 minutes to 1 hour daily. I will be more specific later, but that’s my rule. It could be running, walking fast, Melissa Bender Fitness workouts etc. I just have to move it for 45 minutes to 1 hour. I started this on Labor Day. Plus I’m going to also add sun salutations, stretching and legs up a wall pose for circulation. 

Eat clean 80/20. The majority of my vegan diet must be Whole Foods plant based with processed vegan food only occasionally. Tracking every bite. I stopped this and I gained three pounds. It’s ok, I’m painfully human. I may try to not eat past 8 pm, but this may be difficult with my work schedule. I’m going to try. Time to revisit vegan meal prepping. 

So this is my restart of my restart. We are still planning to go to Henry’s Home and Horse Sanctuary soon, definitely this month. Ive been asked by my husband James to go when he can go. I do plan to visit and volunteer regularly after our first visit. There’s a lot going on in our life but this is something I can’t wait to do. I’m also helping a friend with a bake sale for her dog that needs surgery. I will post more about that later. I’m baking vegan goodies!! I believe we are here to be of service to others. Sometimes stress gets in the way, I’m working on ways to destress naturally.

I’m off to get my daily exercise in. I want you to know the road to goal does have potholes, and an occasional thunderstorm or two that can throw you off track. EASY VEGAN ALFREDO

It’s Tuesday and I’m late to updating my weight loss. I’m down another 2 lbs, weighing in at 171 lbs. That’s 13 lbs since I joined WW online and 18 total weight loss. I was 159 lbs when I moved to Houston from Los Angeles in June 2017. I’m almost there. My first weight goal is 159 lbs. My ultimate weight loss goal is to weigh in around 140 lbs.

Soon I will also be sharing my fitness journey and my volunteering journey. I plan to try on new routines to help me get to all of my goals. Waitressing has taken up most of my time, and  some new time management skills are needed.  I am a work in progress for sure, but I keep on keeping on despite life’s stresses. I am losing weight again and I’m living my authentic life as a vegan, for that I’m immensely proud. 

I love to experiment with vegan cheat meals on my day off after weigh in, of course always counting my portions. I was craving Alfredo and my vegan Fettuccine  Alfredo hit the spot. It’s an easy recipe and just as creamy as Alfredo made with dairy. Here’s the recipe below, even vegans need cheat meals. 

Easy Vegan Fettuccine Alfredo

1 lb Fettuccine

2 Tbs olive oil, 1Tbs earth balance vegan butter

1 cup vegan creamer non sweetened or unsweetened soy milk

1 cup vegan Parmesan cheese, I used GoVeggie

4 cloves garlic

handful of fresh chopped basil, parsley

salt and pepper

Half of a fresh squeezed lemon juice

Cook Pasta  according to directions. I bring my water to a rolling boil and cook Fettuccine for 12 minutes. 

Reserve 1/2 cup pasta water. 

In a large pot sauté garlic in olive oil and earth balance for 3 minutes.

Salt and pepper.

Add unsweetened vegan creamer or unsweetened soy milk, bring to a boil, cooking for two minutes.

Add reserved pasta water, fresh lemon juice and vegan cheese. Bring to a boil and stir until lumps disappear.

Add salt, pepper, lemon juice and fresh basil.

Continue stirring until smooth.

Stir in cooked pasta, mixing well.

Garnish with fresh or dried parsley and additional vegan Parmesan cheese. 

You can add broccoli, or any vegetable you prefer. A little crushed red pepper would be delicious, or a can of diced tomatoes would be a wonderful addition. We loved it and I will make it again. My first attempt was a fail, I accidentally used vegan creamer with sugar. My second attempt was a major hit!!  I hope you love this as much as we did.

WEIGH IN MONDAY

Happy Monday to all. It’s rainy here, but rainy days and Mondays do not get me down. I’ve chosen happiness and I’m going forth with joy and kindness for myself and others.  I lost another pound. Cue my happy, coffee drinking  post weigh in dance. I’m currently 173 lbs. I’m down 11 lbs since I began WW. It’s slow and steady and I feel in control, so it’s perfect to me. I already feel lighter. I’m tweaking my fitness and I’m working with my number one fitness guru Melissa from Melissa Bender Fitness. I’m going back to what has worked in the past. Working on cardio, flexibility and strength.

As I settle into my fitness routine I will post more. I’m losing weight and baking vegan healthy cookies, for myself and others around me. I’m sharing kindness and joy, no longer wallowing in my weight. I ate pasta and tator tots last week, but the difference is I watched my portion control, I tracked everything, and most of my meals are clean and healthy. Saturday night after work my hubby made me veggie burgers and tator tots, such a treat. I skipped the bun! It’s little tweaks here and there that make a difference in your weight loss journey. I never binge anymore, everything is counted. WW sent me my ten pound charm, how cool is that? 

This weekend we have to buy work boots for our visit to Henry’s Home and Horse Sanctuary. I plan to be a regular there if they will have me. My life has its troubles and giving back helps me through the struggles. We all have them, it’s how we get through them that defines us. I started this blog in 2013 with intentions to lose weight and help a charity with each ten pounds I lost. I never dreamed I would gain half my weight back, but I’m so happy to be here doing what I’m doing today. The weight gain and restarting my weight loss is part of my life journey, I wouldn’t have it any other way. I’m learning so much about myself and growing. That’s a beautiful thing. I realized my success didn’t define me, my kindness defines me. Now I do what I do for my health and my goals, and if I end up looking better great. I’m in it to make a difference and that’s my motivation. 

Thunderstorms today and I love it. As much as I have missed the California sun, I really have grown to appreciate Texas weather. My motto going forward is to Bloom where I am planted. Make a difference in my own backyard. I’ve been baking vegan cookies and they are such a hit, I’m using the money for carrots and apples for the horses. Happy Brand new week. Namaste. WW Weigh In Week One

Happy Monday to all. Today is my first WW weigh in, and I lost 5.4 lbs. I went from 184.4 lbs to 179 lbs. Some of this may be water weight, because now that I’m doing WW online I’m also eating cleaner which means less sodium. I’m being very consistent with my meals and I’m actually eating more frequently. I track every bite. I snack, I track, I bite, I write; well I type it on my app but you get my little rhyme.

I no longer fear food and obsess over a little olive oil. I have control over food, it doesn’t have control over me. I’m enjoying eating, I’m having my 1 teaspoon of raw sugar in my coffee every morning without worrying. As a vegan I’m already limited, so trying to cut other certain foods out 100% just made me crazy. I now practice my own version of moderation when it comes to sugar, salt, oils, and faux vegan meats and cheeses. I don’t cut them out 100% but I may have them here and there, and that’s ok. Tracking gives me back my sanity over food. My work meals are simple and plain, and that works for my lifestyle. I feel the first week of any weight loss and fitness journey sets the tone, and I’m starting strong. 

I picked what charity I would like to assist when I lose my first ten pounds and I will post that in a separate post. My trainer Bethany plans on joining me. We workout tomorrow, and today I’m doing 30 minutes of cardio and a workout. I believe today’s workout is focusing on shoulders and back.

Weight Watchers Online

Sometimes you need help and guidance. I recently started working out with my personal trainer Bethany, my best friend Melissa Benderfitness has amazing fitness and yoga videos I follow, but I was struggling with food. I finally caved in after realizing I can’t do it alone and I joined Weight Watchers Online and downloaded the app. They now call themselves WW and their latest program is called freestyle. It focuses on good nutrition but no food is outlawed.

I’m vegan but occasionally I like vegan fun foods, I can lose weight, have my vegan cake and eat it too. Portion control will help me feel in control, and I will learn to focus again on clean nutrition but not freak out if I have a little vegan treat once in a while. For me WW gives me power over food, anyone who suffers eating disorders understands the power food can have over you. I can’t live like that any longer. Today is my day two and I feel great. This program is livable and sustainable.

My  journey includes fitness. I am doing cardio five to six days a week. I’m working out with my trainer once a week, but soon as I learn what she’s teaching me I will do the workouts 2-3 times a week plus Melissa Benderfitness videos and yoga. I’m on this. I try to do my cardio outdoors when I can, there’s nothing like mobile meditation with nature as your backdrop. Below is me in May 2017 right before my Mom passed away and our move from LA to Houston.  I was in great shape, I did it once, I’m going to do it again. 

Well I’m off for now. I picked a charity for my next ten pound weight loss. I will post soon, I want to use the laptop for that so I can include all of their links. Monday I weighed in at 184.4. It’s ok, I got this. Love and Light to all. We are on this journey together, we can lift each other up as we each go about trying to reach our destinations. The journey is the reward. 

 

 

 

WEIGH IN MONDAY

Happy Monday to all? Today is weigh in Monday and I lost 2 lbs, cue happy dance. That brings me to 182 lbs. I’m down 7.6 lbs. I’m keeping a journal of my meals and calories on the Loseitapp and I’m using Dr Greger’s Daily Dozen App to keep track of my vegan nutrition. I’m doing this six days a week and one day a week I allow a vegan cheat day. On that day I eat whatever vegan foods I like, but I do my best to keep my calories in check. 

Losing weight through stress or when you are in a personal crisis is not easy. For me what’s working this second try around is I’m focusing on my nutrition and my fitness. My meal plan six days a week is very clean, with very low salt, no oils and just a bit of raw sugar in my coffee. Using both apps keeps me accountable. My energy is definitely up since I started the Dr Greger Daily Dozen. My one vegan cheat day a week allows me to eat the vegan foods I love. This week I’m choosing that day to be Halloween.

Another bonus is how incredibly inexpensive this way of eating is. Lentils, tofu, split peas, canned beans no salt, fresh and frozen fruits and vegetables, quinoa, Ezekiel bread, oats, flax seeds, no salt peanuts and no salt peanut butter. It’s not always easy to tick off everybox, yesterday  I missed cruciferous vegetables; but that’s ok. I strive to each day do better. 

I am also working on some new and exciting projects, I also plan to waitress more than usual, and I’m continuing forward with this blog with the intent to post more regularly and I plan more videos in YouTube.

Dr Greger recommends exercise daily and I may start my workouts in the evening on my work days to be able to manage everything I’m working on. I bought an amazing planner from Barnes and Noble to keep everything organized.

It is all about a positive mindset. Stress gets me, and sometimes I feel like I’m drowning in it; than I remember I’m a good swimmer. Right now im treading water through my struggles and my eye is on my health, fitness, strength, flexibility, and longevity. I’m proud to be a plant eater.

WEIGH IN WEDNESDAY


Today is Weigh In Wednesday and I’m happy to report I lost 1 lb this week. That brings me to 167 lbs. I’m starting new! From now on I’m only counting my weight loss from this second half of my weight loss journey. I’m not looking back but looking forward. Here is the stats. SW is my starting weight. CW is my current weight. GW is my goal weight

What am I doing different this time? I am counting every bite and point on my weight watchers app. I’m sticking to the same weigh in day always. I’m making healthy choices but with a bit of wiggle room and counting every thing always even if I go way overboard. I snack it, I track it. I bite it, I write it, I devour it, I empower me. Lying to myself is not empowering. Being accountable is. I got this. I’m also looking for a local charity here near my new home. Moving and sticking to your goals is not easy but I’m finding my new path.

I am not a before, I am not an after. I am a now. Now is the time and living in the present will keep me moving forward in my goals. Give up? Hell no!!

WEIGH IN DAY

Good Morning to all, and what a beautiful Monday it is here in West Hollywood. I am off today and tomorrow, wrapping up my days of cat sitting two beautiful Lilac Siamese. Noodles and Peaches are my other Siamese loves, and my cats have been missing me so it will be time to go home. 

It is weigh in day and I am so happy I stayed the same at 159 lbs, I skipped the last few weeks. My scale broke, and I got frustrated with things. I am still 24 lbs to goal, and with everything going on in my life I admit to having just a few cheat days. Friday night I ate a huge tuna sub from subway, and I definitely felt ill the day after. It made me realize that my eating plan is not just about weight and appearance. It is about how I feel, my health and well-being. I had heartburn for the first time in a very long time, and I didn’t even recognize the symptoms. If you can see from the graph above I have plateaued again since February, but that is ok, No  weight gains is great for me.

I decided on Sunday to get back on track, still counting my points but going back to an anti-inflammation diet and every Monday I can deviate just a little. That way I am eating not to lose weight only, but to continue to feel good and energetic. Mondays will be the only day I consume things like flour. I believe in this type of program but I also know it is good to allow treats and deviations, just not all the time.

Today I am reveling in the fact the scale stayed the same. I feel good, and I will not be deviating this day because I am getting back on track. Next Monday will be my semi cheat day. Today it is all non processed foods with lots of produce.

My knee is healing and I feel my shoulder is too, so soon I will hit the pavement running again and start my work out schedule. I decided to rest so I would not be down for the count for longer than need be. I listened to my body even though I wanted to ignore it, and I am feeling so much better now. I have weaned myself off any pain pills for my knee too, I do not need them anymore and they made me feel awful. The last few weeks I have been walking but that is it. It is hard to slow down but I am healing.

That is all for today. I am going to go down to the pool and take a dip, or if it is too cold go in the jacuzzi.  I am celebrating that the scale stayed the same, it will be much easier now to get back on track.

MAKING FOOD MY FRIEND

Your body is a temple not a trash can. At the same time, you have to learn to live with food, not without it. It is fine to occasionally eat foods that are not considered healthy. For me, I now follow the 80/20 rule. 80% of the time I eat real, clean food, and the other 20% I allocate a little wiggle room for occasional treats and goodies. I find this plan is sustainable for life and living. I can maintain this forever, and not feel deprived. This is how I am moving forward in my weight loss journey, and my life.

Food, it is a necessity of life, the staple of living. We need fuel to live. Food not only feeds the body but it can nurture the soul. Food can be healing, and it can be addictive. For some food can cause anxiety and fear, how much is too much?  One cannot decide to just quit food and go cold turkey. You have to learn to live with food, to achieve balance, to make food your friend.

For the longest time food was my enemy. When I was age 13 I began dancing, and an adult dance teacher told me I must lose 30 lbs between freshman and sophomore year of high school. That began my journey of making food my enemy. I had eating disorders and spent most of my early days trying to avoid food. That post was in 2013. This is now 2017, and I am here to say the old habits came back after that moment. I decided I did not need Weight Watchers after some time, and went at it on my own. I lost my weight, but the old feelings of being obsessive about food came back, in the form of what I was eating instead of not eating. I went from my starving days of yesteryear, to being obsessive over good vs bad foods. Carbs, gluten, sugar, just a little sent me over the edge of guilt and obsession. I think I was bordering on a new eating disorder called Orthorexia. Melissa Bender from Melissa Bender Fitness was the person to suggest this was how I was behaving. She knows my background with food.

I am happy to say here I am in February 2014. I feel like I am back in control of my eating disorders, and I have done so with Weight Watchers Online. Melissa Bender told me she is so happy I am making food my friend, and I am too. I can safely say I am still eating healthy, but I now have a little wiggle room. I no longer obsess with what I am eating, I track it daily on the Weight Watchers App and I am done with it. I eat clean, but I allow some treats here and there. I work the plan each week, and if I feel something is not working, I try something new the next week. I have broken my year long plateau and lost 9 lbs since January 14th, 2017. That brings my weight loss goal closer, I am now 24 lbs from 135 lbs. I will always do this, I will maintain my weight by the points system after I get to goal. I will achieve lifetime status with Weight Watchers, and have a healthy relationship with food.

I am grateful for the food that nurtures me and fuels my body to do the things it loves to do. I will not obsess over bad and good food. I eat clean and healthy yet I enjoy life, and with life comes the occasional treat or celebration. Food is no longer my enemy, food has become my friend. Every Monday, after weigh in I enjoy a treat with my coffee. I do that, and I am still losing weight. I really look forward to the scale, and the treat afterwards.
